This saucisson reminds us of chorizo—the meat is tasty and spicy, yet the heat from the Espelette pepper seasoning is gentle. The fat content is just right, making this dangerously addictive on its own before a meal. It can also be cooked and used to replace chorizo in dishes and on pizzas."
