Owned by Bollinger since 2005, Ayala produces this wonderfully dry and elegant Champagne. Brut Majeur exudes luxury and finesse while remaining very affordable.

Situated in Aÿ, at the heart of the champagne region, Ayala has a rich history spanning over 150 years. Founded by Edmond de Ayala in 1860, the house produced over a million bottles in the 1920s. Production was scaled back during the Second World War, focusing on quality champagne in small batches. In 2005, Bollinger acquired Ayala and began restoring it to its former glory. Since 2006, chief winemaker Caroline Latrive has brought her extensive experience to Ayala, ensuring the house style is preserved with a focus on quality over quantity.
What we say: "Pale gold in the glass with a very fine mousse, Ayala Brut Majeur (Non Vintage) is a delightful blend of Chardonnay, Pinot Noir, and Pinot Meunier. Its delicate aromas include citrus, blossom, and white peach, alongside hints of honeysuckle. With a low dosage of 6 grams per litre, the Champagne reveals its beautifully nuanced bouquet. On the palate, it is fresh and dry, offering well-balanced flavours of apple and peach, complemented by notes of hazelnut. The Pinot Noir adds richness and a long finish, Chardonnay from the Côte des Blancs brings delicacy and freshness, and Pinot Meunier from the Marne Valley contributes fruitiness and roundness. Brut Majeur is perfect to enjoy throughout a meal."
